Instructions

For the chicken marinade, combine 1.25 lbs boneless skinless chicken thighs, 2 tbsp garlic paste, 2 tbsp olive oil, 1 tbsp zesty lemon paste, thyme, salt, and pepper. Massage the marinade into the chicken thoroughly. For the sheet pan lineup, arrange rotary-sliced purple onions, whole lemon slices with the rind, cherry/grape tomatoes, Kalamata olives, and one full container of tomato & herb feta on a sheet pan. Drizzle with olive oil and season with salt, pepper, and oregano. Bake at 425°F for 25 minutes. Broil for 5 minutes until the edges are golden.
